Khao Pat

"Khao Pat" is a very easy introduction to thai kitchen. This, low fat dish is very mild in taste and fun to make.
Incredients: Cooked rice from yesterday. ( So you can use leftovers from other dish. Best rice for this is, ofcourse "Jasmin", but you can use any, sticky rice. Another things: Chicken, eggs, sunflower oil, chili, light soy and dark soy, garlic, shallot, spring onion and cucumber. Okay, this will be fast...

Cut chicken breast in two halves
Cut as thin slices as you can
Smash 4 garlic nails and a piece of chili together
This is enough. (You can do this also with knive, but this way you´ll get the most flavor out
Heat you wok hot enough and add oil. When the oil is almost smoking, add chopped shallot, stir all the tim

Now add garlic and chili mixture and keep stirring

One minute after adding shallot, you are ready for the next step

Now ad chicken, pls keep stirring

Stir until chicken is almost done (the colour should be white)
Add rice and keep stirring

When the rice has heated, add light soy and dark soy. (Light soy is enough for the taste, but adding also some dark soy, you´ll get better colour in your dish. To use only dark soy....  too salty...)

Mix two eggs wit fork. (only to break the structure...)

Add mixed eggs into the wok. Keep stirring until eggs are cooked

Add cut spring onions, stop frying, but mix well.  Your thai dish is done !

Serve with lime and cucumbers. ...exellent...
