Ratatuille (...well almost)

Ratatuille is a french vegetarian stew. This one is a bit more spicy and some flawours from Italy and China. It´s very easy and fun to make, and also, it´s good to eat vegetarian time to time :-)

So le´s start:
Put a generous amount of good olive oil into a deep and hot pan. Add 3 onions. Cut everything in large slices, this is vegetarian and it´s good to see, what you eat...

Add a lot of garlic (again, only smach them open) and some cut ginger
Add mushrooms (Champs are good in this, since they are light in taste and do not hide other flawours). Season the mushrooms with salt and pepper (black ...ofcourse)
Add sweet peppers (add some more oil if you need)..
Ad zucchinies and brussel sprouts
Add some selfmade sweet chili-sauce. (I have written this before)
Add 500 grams of tomato paste and about same amount of vegetarian stock

We´ll get a nice, Italian twist by adding a lot of basil (dried is ok...)
Leave it to shimmer for about 10 minutes (the longer you shimmer, the better will be the taste. But in the end you will loose the shapes of the vegetables, so pls only max 10 minutes...)
...well i have said may times, that vegetarian is for rabbits only. Suprisingly this one I like too... :-)  Enjoy !
