Hare, The sweet roast

Hare (lepus timidus) Is one of the most common forest animals here in Finland. It´s also popular target for hunters, but how to make something delicious out of it is a different story. This is one:

Use deep and heavy pot. Make a "bed" on the bottom with oil and oniponrings
Put cleaned and opened hare on the bed to lay nicely and comfortably :-)
Season the animal with black pepper and salt, add garlic and thyme

Add atleast half a bottle of good wine + gamebroth until hare is almost under the liquid. Now shimmer about 2 hours. In the meantime we can do the rest of the meal.... Or just wait and drink if you have any wine left...
Cut sweet potatoes in nice cubes and fry them in good olive oil about 2 minutes, season with salt and black pepper.
Add some cream, and allow to shimmer about 3 minutes. (do not cook too long)
When hare is ready, filter the liquid and cook until half amount is left. (Do not use all the liquid when you start, only amount you think will be needed for the meal... the rest you can deepfreeze and use later)
Ad some sour cream and cooking cream and mix untill smooth enough. (If you like your sauce to glow, add some butter also..)
Cut the hare for diners add honey all over, let the honey soak a while. Lay the peaces into hot pan and let the honey caramelize for few seconds.
Add sauce to the pan and let it heat together with the meat. Now take te pan off from the hot plate..leave it to wait decoration...
Wok some argula fast with oil, season with salt and pepper
Put everything nicely on pre heated plate and enjoy !
