Nigri Sushi

Synopsis
First understand the most important: Sushi is to eat rice. This means rice is the most important component. Ingredienses that we add now, always come second. (This is why I earlier wrote so detailed note about the rice). Exellent rice is a must. And with really fresh other incrediences, you can make shushi, that you can be proud of.

Some time ago, I wrote a note: How to cook perfect sushi rice. Now we can make some Nigri ( ..will also later write about Maki).






















Wet your hands carefully with cold, running water, shake exess water off. Take a small amount of rice into your hand and gently form an oval shape "cake". At first You will make it too large. ..do not worry with a little experiment, you will learn to make them in perfact size.







Spread some Wasabi paste on a slice of fresh, salted or cold smoked salmon. (Use fresh only, if it is really fresh...) Wasabi paste should be available in good food stores and, ofcourse in ethnic shops.









Place the salmon, wasabi next to rice, on top of the rice cake













So simple. Perfect Nigri. Serve with light soya sauce and pickled ginger
