Tenderloin

Tendreloin is the most expensive piece of meat. It´s (as in it´s name) the most tender, but also light in taste. Since the material is exellent, it´s very easy and fun to prepare.
 Cut all the "white parts" away from the file

 File has 3 parts. In my opinion all different parts need different treatment: Center part is best for beefs, or to be prepared in owen (as we´ll do in this story). It´s also exellent in grill (grilled in one, big piece). The smaller "tail" of the file is suitable for noisettes, carpaccio etc.. (we´ll do it later in some future story). The "head", which is bended is best for stew like beef Stroganoff. But now, the middle part to the owen.

You have to fry it fast (we cook the file in oven) from all sides and also, do not forget the ends. When frying the ends, you have to hold the file with your hand or, with a suitable tool. This way we seal the file to protect muscle juice for running out from the meat, while it cooks in the owen.
Put a brobe in the middle of the file, in the thickest area. Set you thermometer to 52 degrees celcius. Then put the whole thing (leave thermometer out, if you do not want to eat that too.. :-)) in your oven, that is pre heated to 140 degrees celcius. Now wait untill your thermometer will reach the desired temperature. This will take, depending on the size of the file, 15 - 25 minutes. Take the file out from the owen immediately !!!
Again! Do not cut the meat now!!! Wrap it in aluminium, and leave to mature for atleast 10 minutes. (If you cut now, all muscle juice will run out, and your file is good for your dog only...).
While the file is maturing, we can prepare a side dish. I had some pre cooked potatoes, so let´s make garlic-bluecheese potatoes. You need the potatoes (pre cooked), onion, garlic and bluecheese + some cream. Ofcourse some salt and pepper.
Put some oil in the pan and heat.
Add popatoes, season with salt and black pepper
Add onions. (yes potatoes first, otherwise the onions will burn...)
Add garlic

Fry untill potatoes have some tan
Add cream and bluecheese. Lower the heat in your pan and let this shimmer untill the cream has soaked into the potatoes and the rest has vaporated... Yes this is not diet-food...
