Synopsis
What can You cook for a woman, who loves tomatoes and cucumbers, (and other vegetarian....). ...Well hot Mexican could be HOT enought for exhance....
1. Salsa
Red salsa is easy in Finland, because You can not really use fresh tomatoes. All the shops are selling only garden house products and they are tasteless... (grrr....). So I use canned tomatoes. Do the following: Heat some good olive oil in large and deep pot, add some cut onions (the more you add, the better will be the final salsa). When onions are frying, you can add dried spices (you will get richer flawour by adding dried spices already now). I used cumin, plack pepper, basilic (not very mexican), tarragon, chili and some slices of habanero (let´s talk habaneros later...). I also added sugar. Now cook this as long as it has a thicness of your flavour. This will be the base salsa and with additional seasoning you will get different types of this basic mecican side-dish. (You can use this for pizza too...). From the base, I made two red salsas: Garlic and "hot". I minched a lot of garlic and added all to the base salsa (nabours will love us in the morning...). "Hot" salsa I made adding minched habanero. From our taste it was very hot, but I know some of You like to add more.... Guinnes record of raw habaneros is 8 (straight to the mouth...).

I always start Mexican dinner with tortillas. I use red salsa and, this time blue cheese to make a "tortilla sandwich on frying pan.
At last add the sliced tenderloin with minched habanero, some pepper and salt. Now stay awake, this will only need seconds. Turn the meat immediately, after you see muskle-juice rising to the surface. And when the juice is visible again in the other side, your dish ius ready. Put it away from hot plate now. If you do not, continue drinking straight shots with Tequila and forget dinner...
