Vendace "Maipo"

Vendace is very common fish in our cold, northeren waters. It can be catched with nets or seine. A typical vendace in kitchen is around 10 cm long and weights  7 grams. ( Not a giant...).
Most of our tourists eat vendace here at least once in their vacation, since together with reindeer, it´s the most important traditional food.
Vendace is served fried with smashed potatoes, but this time we´ll do something else :-)




Seel yor own plate with butter.














Lay ONE layer vendaces and put some salt an pepper on top.













Mix 2 dl of sour cream (Smetana),  0,5 dl chardonnay (mine was "Vina Maipo" as the name of this dish indicates..) and skin and juice of one lime. Also add some salt and pepper. Mix very well !










Add the mixture and add also some parmigiano cheese on top. Put in 225 degree owen for 20 minutes.
