Sweet potato


Sweet potato, as in its name, is much sweeter than a "normal" one. Here is the link, if you wish to know more about this plant: http://en.wikipedia.org/wiki/Sweet_potato. I´ve used this plant in my work several times. But I have always cut it in thick slices, and cooked the slices in oven with lots of olive oil. That is exellent, but this time I wanted to do it a bit different. This is an excperiment w/o any instructions, only intuition...

I had one, big sweet potato (here cut in cubes), garlic, onions, thick cream abd some sweet chili sauce. (Ofcourse also salt, pepper and olive oil..). To make it as a full meal, I used a nice piece of tenderloin.








I decided to make the sweet potatoes in oven. What is this frying pan doing here? Whatever (almost) you cook in oven, pls first fry the ingrediences. Quick frying before the oven makes two important things: It seals the surface letting juices keep inside and prevents incrediences for sticking together in oven. It also joins seasoning better...
So fry some onions in hot olive oil.



Add sweet potatoes. Make sure your pan is hot enough. (the larger the quantity, the hotter the plate have to be. If the plate is not hot enough, and it is a normal household plate (not a professional, very expensive plate), the cold ingrediences will cool the plate down, and you then will boil not fry...





Now add garlic (smashed and chopped) and some sweet cili sauce













You need to fry the mixture only about two minutes. Then put it into a pot suitable for oven. The pot has to be "painted" with butter (or oil). Add a mixture of thick cream, Dijon mustard, salt and pepper.
When ready, put it into your oven. 200 degrees and some 10 minutes...












Fry tenderloin carefully in the pan, all sides... Note a thick layer of peppers and salt. Fry only to seal the surface. ...mayge 20 seconds per one side... The rest of the preparing will be in the oven. The meat will be in its best, when the inside temerature reaches 52 degrees (celcius). Use a digital thermometer. Put the sendor in the center of the meat, and programme the device. Good temperature in oven is 140 degrees. A second warning: When you take the meat from the owen. DO NOT CUT IT IMMEDIATELY. Wrap it into a folie and leave it for atleast 5 mins. (otherwise, all juice inside will spread out, and your meat will be dry and like a rubber....)

I was happy of the result. But since the sweet potato is really sweet, you have to add some sour salad to finish the plate. Bon apetit.
