Sweet and sour sauce

Synopsis
China style cooking is fun, and fast. You can use almost everything you find in your fridge and closets, but before you start, make some real sweet & sour sauce first. This you can make larger quanitities, since with tightly closed glass, it will remain in good shape in fridge atleast a week. Once you have made this yourself, you will never buy a ready-made-uncle-shit from any store!!

All you need should be available in every store: Fresh ginger, leek, sunflower oil, garlic, sugar, rice vinegar, rice vine, soya sauce, tomato pyre and Maizena (for thickening)

So Let´s start







Mix a teaspoon of maizena with rice wine. Leave it, we´ll use it later













Pour about 1/2 dl of rice vinegar into a bowl













Add 1/2 dl of fine sugar














A spoonful of soya sauce ( light-soya is the best)













Add big spoonful of tomato pyre















Mix all together, and this is the result. ...wait it´s not at all ready....













Now add the Maizena-rice vine mixture and, again stirr well (leave it for a while...)












Heat oil in a wok (or a flat-bottom "semi-wok" that I have. (These work also in hot plates..)












Now add miched ginger (I cut 2 slices from a normal size ginger). Keep gigner in movement all the time, or it will just burn and your sauce is ruined. fry it about one minute









Now add fine-cut leek, and remember to keep movement, stir half a minute












Time to add garlic. I used two nails ....keep movement













...keep movement and fry additional one minute, and then lower the plate heat to medium












Now add the mixture You made in the beginning













Mix everything well, and let the sauce shimmer in low heat about 15 mins. (If it gets too thick, use lid on top of the pan.











Chinese Sweet & Sour sauce. Serve chilled!
