Salmon is cheap, thanks to large growing-bags in Norvegean coast. This time we´ll make a very simple dish in casserole, in the oven.
You need salmon (cleaned, all bones removed and sliced in thin slices), milk, cream, butter, fishstock (optional), eggs, leek or onions,dill, some cheese, salt and pepper.Paint a casserole with generous amount of butter. Lay a layer of cooked and sliced potatoes
Season the layer with salt and pepper
Now add the salmon to tight layer, season with salt and pepper. Add leek (you can pre-fry the leek, but it´s not critical) and lots of chopped dillMix half-and-half milk and cream with 2 eggs (or 3 if you like). Season with salt and pepper. If you like stroger taste, add also some fishstock into this mixture
Add another layer of potatoes and the liquid-mix. season this layer also with salt and pepper. Remember to season after you have added the liquid. (otherwise the liquid will take the seasoning deeper...)
Now we can decorate. (These decorations are, ofcourse not necessary, but it´s nice to put something good looking on the table...). I had some shrimps in freezer and also some cold-smoked salmon in my fridge. Shrimps you do not need to melt, they will for sure melt in the oven, and even do not overcook too much this way. Now you can cover the whole thing with folie. This prevents the decoration from burning. I did not: The main disch is inside and I wanted more it to look good when it´s ready. Yes, and sqeese the lemon juice on top..and do not let the halfes to go to the oven :-)
Since I do not use folie this time, I wanted to protect the shrimps from burning anyway. I grated some parmesan...
Owen 175 degrees (Celcius) and 50 minutes
