Lets make chicken in an unusual way
Buy chicken file (breasts). When you lay a file on the cutting plate, you see, that other end is much thicker than the other. Make a horizontal cut trying to make the file even... These I have cut..
Lay plastic on the table and put a drop of oil on it. Next put the file and add another plastic on top. Now the file is between two plastics. Hammer (..not sure if this is the correct english word..) the file untill it´s about twice larger than in the beginning. Leave it between the plastics.
Whe you have hammered all files. Remove carefully the plastic on top of the file. Add some chopped, sunfried tomatoes and some blue cheese. With the help of the plastic under the file, make a closed roll. (Do not roll the pastic inside :-)
Heat your pan, add oil and a lot of curry. Fry nice colour all over the rolls. (Put first the seam down, it will lock the roll). Now you leave the rolls for a while. You have to calculate, when your whole dish will be ready, to be able to put these to the owen at the right time. In the end you fry the rolls in 200 degree owen about 12 minutes. Pls do not put them into your owe too early. So about 12 mins before your planned serving time...
Now we makse a sauce. Cut some onions, Heat another pan, add a generous amount of oil and a generous amonut of curry. Add the small pieces of chicken file, that you cut off earlier. Fry untill nice colour. Then add some white wine.
Add crushed pinepples (a normal size can is enough). Add also a small amount of chicken stock now.
Add cream untill everything is under the surface. Now let it cook and shimmer some 15 minutes. The liquid of that will be your sauce. (The chicken and the rest you can store and re-heat later, it´s exellent pasta-sauce).
When you have prepared side dish (this time curry potatoes), and taken the rolls from the oven, it´s time to decorate and serve. Cheers.
