Inexpensive but delicious

Liver costs next to nothing. Now, when autum is coming, stronger meals will taste again. Let´s make a perfect stew using liver (this time cow...)










You need liver (this is a bit less than half a kilo), potatoes, cream (some 20%), butter, stock cube, black pepper and Maizena











Heat a wok-style pan, cut potatoes to a shape of boat and leave skins. (Most of the healthy minerals and vitamins are right next to the skin, so spiling makes potatoe poor...) Add oil to the pan, and add potatoes. Season with salt and black pepper. Start with a hot pan, but lower the temperature soon, and let the potatoes shimmer almost half an hour. Pls turn them occasionally.




Tricky part: Take the film out of liver. Use fingers. If you use knive, you will loose a lot of juicy liver. Just pull your fingers under the film, and separate liver from the film. (Sorry, unsharp picture, it´s not easy to work with the liver on the other hand, and the camera on other....)






Well done. See almost no eatable part left on the film













Cut liver in pieces














Add butter on hot pan (here is some 80 grams)













Add liver and season with pepper. DO NOT ADD SALT, fry until nice colour












Add a cube of meat stock














Add hot water. (Not too much. Right amout of water only almost sinks liver). Lowet the heat and let shimmer 5 mins.











Mix a generous teaspoon of Maizena with water













Add Maizena mixture and stirr well














Add half of the amount of cream you are using (I used total 2dl, so now 1dl). Let it again shimmer about 5 mins. You will notice a very tempting smell will spread in kitchen. Be patient, it´s not ready yet... :-)

After 5 mins, add rest of the cream














Ready, well shimmered liver














(Basically, this is soooo great, that I do not need any salad. I put it only for this publication...) :-)
